- 250 grams of pasta
- 4-5 ripe tomatoes
- 1-2 green bell peppers (capsicum), finely diced
- A handful of fresh basil leaves
- 2 tablespoons of cooking oil
- 1 tablespoon of ginger paste
- 1/2 teaspoon of salt
- 1/2 teaspoon of chilli flakes (adjust to your taste preference)
- 1/2 teaspoon of oregano
- 1/2 teaspoon of freshly ground black pepper
- Grated Mozzarella cheese for a creamy garnish
Step-by-Step Guide: Red Sauce Pasta Recipe
Step 1: Boil the Pasta
- Begin by filling a large pot with 5–6 cups of water and putting it on the stove to boil.
- Add around two small tablespoons of oil and half a small tablespoon of salt to the boiling water. This will help flavour the pasta.
- Once the water is bubbling, add 250 grams of pasta to the pot and let it cook until it becomes soft.
- When the pasta is cooked, carefully drain the water and set the pasta aside.
- Don’t forget to keep some pasta water aside. This will be helpful later on.
Step 2: Make Tomato Purée
- In another pot, bring water to a boil.
- While the water is boiling, make a small, cross-shaped cut at the top of each tomato.
- Put the tomatoes into the boiling water for about 7-8 minutes. You'll notice the skin starting to peel away.
- Take the tomatoes out of the water and let them cool down a bit.
- After they've cooled, peel the skin off the tomatoes and chop them into big pieces.
- Use a blender or mixer to blend the tomatoes into a smooth paste. Your tomato purée is now ready.
Step 3: Prepare the Red Sauce
- Take a pan and heat one tablespoon of oil on it.
- Add one tablespoon of ginger paste and the finely chopped green bell peppers to the pan. Stir and cook them for a little while.
- Put the tomato purée you made into the pan and cook it on medium heat.
- Add a few basil leaves, around half a teaspoon of chilli flakes (adjust according to how spicy you like it), half a teaspoon of black pepper powder, half a teaspoon of oregano, and a pinch of salt to the pan. Stir everything together.
- Let the sauce cook for about 5–6 minutes until it thickens and becomes flavorful.

- Now, add the boiled pasta to the red sauce that you prepared. Add the pasta water from before. This gives the red sauce a silky texture.
- Mix everything so that the pasta gets coated in the red sauce.
- Allow the pasta to cook in the sauce for 1-2 minutes. This helps the pasta absorb the delicious flavours of the sauce.
