A local Maharashtrian favourite, the Sankeshwari Chilli is known for giving Kolhapuri and even Konkan food its distinctive flavour bright red colour. With a medium heat level and a consistent release of spice, the chilli’s flavour profile faultlessly lends itself to sauces, pickles and other condiments. It may have once been one of the humble workhorses of the chilli world, but not anymore.
